I go for recipes that are fast, healthy and don’t require much clean up. A busy Mom’s dream,right?! If you’re anything like me then you’re going to LOVE this one!
My favorite part of this recipe is the amazing flavor the Rotel tomatoes gives the chicken. It’s not too spicy but gives it a good kick.
Ok here’s what you need:
2 lbs of boneless skinless chicken thighs (chicken breast work too)
2 10 oz cans of Rotel Diced Tomatoes & Green Chilies – Mild
1 cup shredded Mozzarella cheese (feel free to use more if you’re a cheese lover. But beware it will up the calorie and fat content)
1.)Per heat oven to 400
2.) Trim excess fat from meat. Tip: if I’m using chicken breast that are larger, I butterfly them. Cut down the middle making one large breast into two.
3.) Place in bake dish. Add salt n pepper to taste
4.) Drain tomatoes and pour evenly of chicken
Bake for 20 minutes
Remove and sprinkle cheese over chicken. Bake for another 10 mins.
Let it cool for about 5 minutes. Serve with your favorite veggie. Green beans are perfect with this!
